If you have not yet made plans to attend Sunday’s Taste of Williamson presented by Vanderbilt at CoolSprings Galleria you will want to purchase tickets after you hear about the great food that a Brentwood-based restaurant is preparing for you to taste.
Corky’s has long been an institution in the heart of Brentwood and this will be their fourth year to participate in Taste. Known for their barbecue, Corky’s also offers gourmet desserts that will make your mouth water. Whether you choose a generous serving of cheesecake or large slice of Key Lime Pie, these desserts are the perfect ending to a great meal. Don’t try to find out the recipe for the pie though, as Dale Jennings, chef and kitchen manager, is the only one who makes the Key Lime Pie -- the recipe is his best-kept secret!
How much food does it take to feed the hundreds of people who attend the Taste each year? “Not as much as you would think. We prepare enough food for 100 people. Because it’s small portion samples the food goes a long way,” Jennings shared.
It takes 17 hours to smoke a pork shoulder and 3½ hours to smoke ribs to perfection. The meat melts in the mouth and after one taste you will see why Corky’s can boast that they have the finest hickory-smoked BBQ in town.
Travis Edinfield is operations manager, and he and Dale both hope you will stop by their booth and experience Corky’s. Then they invite you to the restaurant if you are not already a loyal customer.
